This Peruvian coffee is fully washed with an extended 92hr fermentation, fragrant, funky and faintly reminiscent of amber hued cocktail classics. Packed with juicy notes of orange bitters, ruby grapefruit, balanced with a honey sweetness. Drink your coffee however you like it, but for this one, try it black, and thank us later!
Norbil Perez is a founding member of Aromas del Valle Co-operative and the producer behind our latest coffee. His 4ha Finca La Chirimoya is located at exceptionally high altitude in Santa Teresa. Norbil’s diligent and quality-conscious approach drives constant improvement every season. Consistently participating in the training and workshops alongside his co-operative on productivity, quality and experimentation of new fermentation and drying processes as a way to increase cup complexity and the value added to farmers’ coffee.
This extended fermentation washed lot is selectively harvested by hand. Ripe cherries are floated to further select the densest (highest quality) cherries for processing. The cherries are then fermented for 50 hours, pulped, fermented again for 42 hours, and then washed and dried on raised African beds. Drying takes an average of 17-18 days.

You can brew this coffee however you like, but for the best results, we highly recommend a filter method like a Chemex, a V60 or a batch brewer.
