Ethiopia
There are fully washed coffees, and then there are fully washed coffees.
This is the latter.
An excellent example of Ethiopia at its finest, this wonder comes from Worka Wuri, a group of 650 smallholders who live near the town of Gedeb, in the renowned region of Yirgacheffe. High altitudes, fertile soils, consistent rains, good harvesting practices and expert processing at the local wet mill come together to produce coffee that is as distinctive as it is delicious.
This is another filter favourite, so expect lemon sherbet, peach tea sweetness, and a blast of florals; jasmine, honeysuckle, and a hit of rosewater too. In espresso, those florals will be turned up, but paired with layers of caramel sweetness, and in aeropress, mokapot and cafetière, you should find plenty of peach, some apricot and a little pear going on too. If you’re brewing espresso, you may wish to dial down the dose a touch, just to get a little bit of extra dilution, as lengthening the shot will showcase this coffee in all it’s deliciousness.
