San Cristóbal de las Casas is a ‘magic town’ in Chipas, Southern Mexico. Named as such by the Mexican government as the region is a glowing representation of the country’s heritage and national identity. It is there that a group of smallholder farmers live and work, resulting in high-quality coffee, typified by a very clean cup with notes of caramel, nuts, and chocolate.
Producers here have learned how to process their coffee to ensure quality. Only the best cherries are selected for the specialty market. After depulping the coffee ferments for 12 to 17 hours before being washed and dried on small drying patios next to farmers’ homes.
